Zucchini Slice

Whether you’re looking for a quick breakfast, a light lunch, or a satisfying snack, our zucchini slice promises to deliver a mouthwatering experience that’s both nutritious and incredibly easy to make. As adults we get a top up of our veggies, and well the kids won’t even know it’s veggies.
Ingredients:
1 large zucchini grated
1 large carrot grated
1 large onion diced
⅓ cup grated cheese
¼ cup crumbled feta
½ cup Self Raising Flour
¼ cup chia seeds (great to get extra Omega 3’s in)
5 Eggs
A serve of a greens powder (optional – if you want a further boost of the greens benefits)
3 Vegetarian sausages chopped (optional – or any other meat for extra protein)
Salt & pepper, mixed herbs
Pine nuts to top (optional)
Directions:
Lightly add olive oil to a baking dish
Grate the zucchini and squeeze out excess water with a paper towel.
Add to other ingredients and place into the baking dish and sprinkle with pine nuts.
180 deg oven until cooked through.
Cut into 6 serves.
Option – put into muffin tin for individual serves, lunchboxes or as a snack.
